Hi Mary, the chilli peppers can remain on the plant for a few weeks after they have fully ripened without losing their firmness/freshness. So that would be my suggestion...leave them on the plant until you are ready to pickle. Putting them in the fridge will accelerate the aging. The alternative is make smaller batches in smaller jars as and when the chilli peppers are ready!]]></description>

Do I just refrigerate the ripe ones and wait for the others to ripen or do I freeze them and wait until they are all ripe and then pickle all of them?
