All scores are out of 10. A score of 10 is exceptional and 1 is very weak. The goal is not to reward heat alone, but to highlight sauces that deliver great taste and work well with real food.
For each sauce, I score: Overall, Heat Level, Heat Linger, Sweetness, Acidity, Saltiness, Umami, and Mouthfeel.
The overall rating (out of 10) is my final judgement of how much I enjoyed the sauce and how likely I am to use it again. A highly rated sauce usually has strong flavour, good balance, and a heat level that supports the taste rather than overpowering it. The overall score is not a simple average. It reflects the complete experience and how much I would reach for the sauce again.
This league table is updated regularly as new episodes become available, ensuring it remains current as I review additional sauces.

I have this rule because, in the early days, I was made ill by a sauce that was sent in. So it’s simply about staying safe and responsible in the future.
