Traditional Pad Thai Recipe
Ingredients
- Rice noodles
- Shrimp, chicken or tofu
- Peanuts
- 1 Egg scrambled
- Bean sprouts
- Shallots and garlic
- Oil
- Fish sauce
- Oyster sauce
- Brown sugar
- Tamarind paste
- Brown rice noodles
- Red bell peppers
- Zucchini
- Onion
Instructions
- Soak the rice noodles in cold water for about 20 minutes or until soft.
- While the noodles are soaking, prepare the sauce by combining tamarind concentrate, fish sauce, brown sugar, and soy sauce in a bowl. Mix well until the sugar has dissolved.
- Heat oil in a large pan or wok over medium-high heat. Add minced garlic and chopped shallots, and sauté.
- If you're using chicken or shrimp, add them to the pan and fry until fully cooked.
- Push the protein to one side of the pan and crack an egg into the space. Quickly scramble the egg.
- Drain the soaked rice noodles and add them to the pan along with bean sprouts and sliced tofu (if desired).
- Stir-fry everything together for a few minutes until well combined.
- Pour the sauce over the noodle mixture in the pan, ensuring that everything is evenly coated in the sauce.
- Continue cooking for another 1Â – 2 minutes, stirring constantly, until all ingredients are heated through and well mixed.
- Remove from heat and serve immediately, sprinkling the chopped peanuts on top.

This is a favorite Thai dish of mine, and I like using fresh ingredients in my cooking. You will not be surprised to learn that I regularly add my homegrown Piri-Piri Chillies into my recipe for an extra kick.

ChilliChump Pad Thai Recipe
Equipment
- Wok
Ingredients
- 100 g Ribbon Rice Noodles (Dried) Thick cut
- 3 Ripe Piri PIri Chillies (Chopped up) Thai, or other birds eye chillies work fine. Can be dried or fresh.
- 225 g Raw Prawns
- 5 Spring Onions
- 1 Egg
- 3 cloves Garlic crushed
- Crushed Peanuts
- 1 Lime Sliced in wedges
- 2 tbsp Vegetable oil
- Bean Sprouts
Pad Thai Sauce
- 5 tbsp Fish Sauce
- 2 tbsp Tamarind Paste
- 2 tbsp Sugar Brown sugar preferred
Instructions
- Prepare the rice noodles: pour boiling water over them and soak for 6 minutes. Then rinse with cold water to stop them from cooking, and drain the excess water.
- While the rice noodles are soaking, dice up the spring onions.
- Prepare the Pad Thai sauce by mixing the tamarind paste, fish sauce and sugar.
- Brown the crushed peanuts in a hot wok . Keep them moving so they don't burn. Remove the peanuts and put aside.
- Add the vegetable oil to the wok and bring up to heat again. Check it is hot enough by throwing in a piece of the spring onion. The spring onion should be sizzling.
- Add a handful of spring onions to the wok.
- Add the crushed garlic (if you want a stronger garlic flavour, add the garlic later, when you add the prawns).
- Add the rice noodles and the chopped up chillies
- Add 5 tablespoons of the Pad Thai Sauce. And mix together.
- Move everything to the side of the wok, and add the egg to the open space. You may want to add a little more oil at this stage.
- Once the egg is fried up, mix it into the noodles.
- After 4 minutes of stiry-frying, add the prawns. Stirfry for a further 4 minutes, keeping everything moving.
- Remove from the heat, and plate up your Pad Thai. Sprinkle the browned, crushed peanuts on top, and add a handful of bean sprouts. (Important: Only use raw bean sprouts if the package they are in says they are "ready to eat". If you re unsure, add them when you add the rice noodles to cook them through)
- Squeeze some lime juice over your Pad Thai
- Enjoy!
